The soils are mainly of alluvial origin, rich in clay and silt which make them fertile and allow the obtainment of fresh and excellent semi-sparkling and sparkling wines.
The Salento soils, richer in tuff and limestone, are suitable for the production of red grapes that give more structured and intense wines such as Primitivo.
